Foodie Fridays: Baked Salmon with Roasted Potatoes and Asparagus

As a vegetarian I eat mostly fruits and veggies, however, I do eat fish about twice a month. When I decide to have fish its usually this dish. I experimented for a while before making this dish perfect. It is one of my husbands favorite dishes, and a dish that I make for him regularly. Its a healthy alternative to most dishes out there. I also make it for my girlfriends when they are over and the go gaga over it!
