Foodie Fridays: Fruit Tarts

Did I ever mention that I love everything in miniature? I love cupcakes, mini muffins, petite fours, and tarts. When my family decided to do a BBQ for my moms birthday, I immediately took the job of desserts. I had planned on making a lot of mini tarts, in all my moms favorite desserts. I made lemon meringue tarts, key lime tarts, coconut macaroon tarts, pecan pies, and fruit tarts. I found the recipe here, and it came out delicious! My family went crazy for all the tarts, but my favorite was definitely these fruit tarts. The custard alone was amazing, I licked the whole bowl until it looked clean again.

Foodie Fridays: Pecan Tart

 It was my mothers birthday last week and I made all of her favorite pies and tarts for her get together on Sunday. I made Key Lime tarts, Lemon Meringue tarts, Pecan Tarts, Fruit Tarts, and Coconut Macaroon tarts. I am so happy with the way everything turned out. I got so many compliments and people telling me that I should take up baking as a job. I really enjoy doing it, but would never want to do it for a living, I love making desserts for the people I love.

Foodie Fridays: Chocolate Crepes

 Every year on mothers day and my mothers birthday I make crepes, they are her favorite and you can do them a million different ways. This mothers day I did something different and I made her chocolate crepes, which was a huge hit. I had mine with nutella and banana and my mother had them with strawberries and fresh whipped cream. It is now her birthday today and I will be making these again for her. I just want to say mama I love you so much and thank you for being an amazing mom and nana.

Foodie Fridays: Scones

 I love breakfast, I have found that if I have a delicious meal ready for me in the morning it makes it easier to wake up. I love foods that you can make at the beginning of the week and have for the duration of it. I don't know why I don't make these scones more, they are delicious. Growing up I had a nanny that would make scones and brown bread when I was over, to this day scones remind me of her.

Foodie Fridays: Cupcakes and Tea

My daughter had her first tea party with a friend from school, so naturally I decided I would make cupcakes and cakes. I used a Martha Stewart frosting recipe that I have been using for a while and it was pure perfection. I rarely use this recipe because I have been known to eat 9 cupcakes in a row. Everyone I know loves this recipe and tells me I should open up a shop solely for cupcakes.

Foodie Fridays: Coconut Raspberry Cookies

 Have I declared my love for raspberries? I really do love them, and any dessert that has them will end up in my mouth! I got a cookbook a couple years ago and there were all these recipes that I wanted to try, and never did. Today I decided that I would see what I had lying around and make something from it. These cookies took 15 minutes and are delicious. They have a hint of lemon which makes them unlike anything I have had before. They are chewy and soft and will be my new treat when company comes over.

Foodie Fridays: Morning Glory Muffins

Every Sunday morning I would wake up early and run out to the farmers market by my house in hopes of getting some morning glory muffins. These muffins were everything I wanted in a breakfast, it was delicious, it had crunch, it was moist, and was filling. I would normally get one for every day of the week, but it cost me $30 each week, and then I thought, I can do that! So I looked online and did a lot of trial and error, and I found these muffins which are just as good, if not better than the farmers market ones!

Foodie Fridays: Raspberry Cupcakes

Since as long as I can remember I have loved anything with raspberry.  I remember driving to Connecticut to see my moms friend and we would always stop at this farm, a couple miles from her house, and get two containers full of raspberries and by the time we got to our destination I had eaten all the raspberries. Every year on my birthday I would have a raspberry mouse cake, and it was always perfection, a tradition that I have continued with my daughter. I love them more than words can describe in this post. So I knew for my next Foodie Fridays post I would have to make cupcakes, and what better cupcakes to make than raspberry cupcakes. Its a time consuming recipe, but the results are so worth it. The cake itself is moist and delicious, the icing, ahh the icing, it is creamy and sweet and has just the right amount of raspberry taste. Recipe
